Grape Leaves

Grape Leaves, also known as Dolma or War'aq Al Inab, is a dish originated from Turkey. And later expanded into the Middle East and started to be known as different dishes and it had different ways to make it. They use the filling to be stuffed in other vegetables, like Bell Peppers, Pepper, and many more.

Recipe

Ingredients

- Jar of Grape Leaves

- Grain rice (soaked in water for 15 minutes)

- olive oil

- onion

- salt

- black pepper

- allspice

- cumin

- fresh parsley, dill

- juice of 2 lemons

- Optional

- tomatoes

- ground beef

- potatoes

Preparation

- If you are using a jar of grape leaves or you are getting fresh grape leaves, you need to wash them and then put them in boiled water for around 10 minutes.

- Then you can soak the rice in the water for around 15 minutes. Until it is not too hard so it can be broken.

- Some people choose to make ground beef, and other's choose to make just lamb meat or any type of meat (has to be halal). If you are going to choose Ground Beef, then you have to cook it well and then add it to the seasonings and the rice.

- And if you choose the Meat, then you will put it in boiled water, and then you will add bay leaves, tomatoes, and onions to the water when the meat is almost boiled.

- Either way, you need to make the stuffing/filling, so you put a pot on the stove high-heat, add the olive oil, rice, allspice seasonings, the tomatoes (should be crushed and turned into a sauce) and the rest of the seasonings. And you can also add your ground beef if you have decided to make it.

- You will stir it in the beginning and then leave it until it starts to bubble, for about 10-15 minutes.

- Then you can take the grape leaves, and the filling and sit in your workplace, and start rolling the grape leaves.

- Then you will get either the meat that you used or you can peel and cut potatoes in circle form, and put them on the bottom of the pot so the grape leaves don't burn. After putting the layer of potatoes then you can start to layer the grape leaves. And then add either hot boiled water, or add the meat broth until covered, and some of the lemon juice. And then cover it and put it on the fire on the stove for around an hour or until the grape leaves are ready to be eaten and served.
